FALL IN LOVE WITH THE ISLE OF PALMS: Kim Boykin
One of the greatest things about living in South Carolina, or just across the border in NC is, you’re no more than three hours from a slew of great lakes, as well as, the beach and the mountains.
One of my favorite things to do is load up our two labs and one Jack Russell Terrorist and head to the Isle Of Palms! The IOP is just about the happiest place on earth, sorry Mickey and Minnie, because it’s this wonderful sleepy little beach town AND best of all, it’s only twenty minutes from Charleston. SIGH. One of the most beautiful cities on the planet, at least that I know of:-)
I stay busy beach combing, biking, cooking and, everyone’s favorite Lowcounty activity, dining out. There are so many fabulous places to dine near my house, there’s no need to go into Charleston. But boy, oh boy, when I do, it truly a culinary wonderland.
Here’s one of my favorite recipes from one of my favorite restaurants. Enjoy!
Lowcountry Shrimp and Grits
Grits:
1 ½ cups of quick cooking grits
5 1/4 cups of water
¾ cups of half and half
2 ½ tsp. sea salt
Cook grits as directed. To spice it up a bit, after grits are cooked, blend in 2 ½ ounces of Brousin black pepper cheese until smooth.
Shrimp:
¼ pound of spicy sausage such as Andouille
1 pound of shrimp, peeled
1 T. cooking oil or olive oil
2 T. butter
1 tsp. garlic
½ cup red sweet/bell peppers chopped fine
1 medium onion chopped fine
1/4 tsp. red pepper flakes
½ tsp. cayenne pepper
½ tsp. salt
1/2 cup of white wine
In a sauté pan, over medium high heat, heat oil. Add sausage and render for 3 minutes. Add garlic and stir for 1 minute. Add shrimp and butter and sauté for 3-4 minutes or until shrimp are done. Stir in wine and remaining ingredients simmer for 5 minutes. Serve in shallow bowls with shrimp mixture on top of grits. Garnish with scallions and serve.
